Got another recipe for ya! And this original is even in the official Emma's Recipes cookbook! Perfect for breakfast/brunch, dessert, or literally anytime anywhere. Basically, there's three layers: the cake, the filling, and the streusel topping. Honestly, I could just eat the streusel by itself, but for obvious reasons involving butter, I will refrain for now.
Here's a list of supplies you'll need:
- 9 x 13 glass or metal pan
- 1 large size bowl, for cake
- 3 medium size bowls, for filling, topping, and yogurt/milk mixture
- Electric whisk or handheld whisk
- Spatula
- Measuring cups/spoons
Ingredients:
Cake:
- 3/4 cup butter, softened
- 1 tsp salt
- 1 1/2 cup sugar
- 1/3 cup brown sugar
- 2 1/2 tsp baking powder
- 2 tsp vanilla extract
- 3 large eggs
- 3/4 cup plain Greek yogurt
- 1 1/4 cup milk
- 3 3/4 cup all-purpose flour
Filling:
- 1 cup brown sugar
- 1 1/2 TBS cinnamon
- 1 tsp unsweetened cocoa powder
Streusel Topping:
- Preheat oven to 350 degrees Fahrenheit.
- Grease a 9 x 13 pan.
- Mix filling ingredients in a medium size bowl and set aside.
- Mix streusel topping ingredients in medium size bowl and set aside.
- In large bowl, beat butter, salt, sugars, baking powder, and vanilla until smooth.
- Beat in eggs one at a time.
- In separate medium size bowl, whisk together yogurt and milk until well combined.
- Add flour to butter mixture alternately with the milk/yogurt, beating gently to combine.
- Spread half the batter (approximately 3 cups) into greased pan (9 x 13).
- Sprinkle filling evenly atop the batter.
- Spread remaining batter on top.
- Use table knife to gently swirl the filling into batter (only swirl, don't combine).
- Sprinkle topping on top.
- Bake for 55-60 minutes or until dark golden brown on bottom (until toothpick comes out clean).
